Inspired from my baking blog posts, I wanted to do some more foody ones because I love cooking! One of my favourite dishes is pasta – whether it lasagna, bolognese, carbonara or pasta on its own (yes dry) I LOVE IT! This dish in particular is quite an easy one and I pulled together a few last bits we had in our fridge…
YOU WILL NEED:
Fillet of salmon
The amount of ingredients needed will vary depending on how many you’re cooking for…I was making this for one. Also, you can choose to add other veggies like peppers or onions if you wish – alter the recipe however you like!
Bake the salmon in the oven for 20 mins at 180 degrees. Use a glass dish or oven proof tray.
Meanwhile, boil some pasta in a pan of water. (tip – wait until the water is boiling before putting in the pasta, if you also add a splash of oil it prevents the pasta from sticking to the bottom of the pan.)
In a frying pan, throw in the chopped up tomatoes and fry on a medium heat until slightly brown and bit mushy. I also added in some spinach as well and left to simmer.
Chop up the feta cheese into chunks and put to one side.
Once the salmon is cooked, remove from the oven and chop into chunks ready to add to the pasta.
Drain the pasta and put back in the pan it was cooked in. Add a spoonful of philadelphia, the tomatoes, salmon and feta cheese and MIX!
Portion out into a bowl, add a sprinkle of salt/pepper, extra cheese if you like and ENJOY!
